Get Your Greens –In a Sandwich!

TPDSandwichWhen hunger strikes, satisfy it! Don’t settle for anything ordinary or snacks that will only drag out the agony until you can have your next real meal. Try this arugula, avocado, and smoked prosciutto sandwich that crunches with every bite! Served warm off the grill or cold(ideal for lunches on the go!), the buttery toasted bread that envelops three of my favourite things tastes a whole lot like heaven. And no guilt allowed here –look at all the green goods you’re getting!


1 1/2 tsp butter

1 bun

1/2 large avocado

1 cup arugula, washed and dried

2 slices of smoked prosciutto(regular prosciutto works just as well)

Putting it together:

Place a pan on the stove, over medium heat. Put the butter onto the pan and allow it to melt, ensuring it covers the entire surface. Then add the bread, which has been sliced in half horizontally, with the crust facing up. Let it toast until the interior is golden brown. This makes its outer layer nice and crisp, while the inside stays fluffy.

Slice your avocado and lay it on the bread, adding the arugula.

Place the slices of prosciutto into the pan that you’ve used for the bread, and fry them for about 5 seconds on each side. Add them to the sandwich in progress and it’s almost good to go!

Finally, add the top part of the bun and slice it all in half.  There you have it, now bite in!
